Monday's pot luck dinner was a chili cook-off. Chili cooks came up with an amazing array of 9 varieties, including Texas Chili (no beans), White Chili, and several Veggie Chilis. The voting resulted in a tie between Sam McInroy and Jean Hodgdon. Congrats on your cooking prowess! Of course, all the attendees won a good dinner from the deal.
A secretive group also decided to throw a surprise birthday party for Consuelo Stacy, whose birthday was 12/31. Those of us that know Consuelo well knows that she will do anything to try to uncover any surprises, but the committee kept her completely in the dark. She was so happy to be honored, and received lots of socks (ask her why when you see her) and a great red nightie.

ReplyDelete3/4 lb hamburg, 1 tsp chopped garlic, 14.5 oz can diced tomatoes, pkg of original McCormicks chili seasoning, 2 T maple syrup,
3 slices bacon, 1 med bell pepper, 10.5 oz Campbell's French Onion Soup, 15 oz can red kidney beans (drained), 1/2 tsp cinnamon
Brown meat, drain well, set Cook bacon, set aside. In same pan cook/stir garlic in a little bacon fat for 1 minute, then add chopped peppers and saute til al dente. Add tomatoes, soup and seasoning mix...bring to boil...add meat, crumbled bacon,beans, maple syrup and cinnamon. Simmer for at least 1 hour.

ReplyDeleteDebone a rotisserie chicken, soak, then sort, then cook 1 to 1 1/2 lbs dry navy beans(or, preferred, cannelini beans)....Use Carroll Shelby's white chili mix( has spices, masa flour, cayenne pepper). .....1 qt ckn broth... Combine all of these in a crock pot. Cook on medium for several hours...just before serving add 1 pint sour cream and 8 oz shredded monterey jack cheese. Keep a bottle of Loozieanna hot sauce handy . This recipe contains no red meat and no red beans. No animals were harmed by the chef in preparing this recipe. Harvey's harmed one chicken.
